Whats the best way to look after these fish and why. I noticed that with the blue eye most of the time commercial spike them and gut them and gill them but don’t behead them.
Why not take the head off and take guts with it?
What about bigger fish like the Bass grouper?
How are the fish transported to markets shops etc. Are they frozen at any stage or just on ice slurry?
The heads are worth money and the fish keep better
with their heads on.
We put the fish in an ice slurry and if you don’t
remove the airbag etc, they will not sink.
We leave the heads on all our fish. Some fish are
headed before being sold and the heads sold
The fish are transported fresh chilled, packed in
ice to the wholesalers.
They are iced the whole time and if handled this
way, the buyers know they will have a 10 + day
Do you ever freeze down the blue eye or do the buyers?
What is the best way to store/freeze these fish if not
being used within 10 days?
